Between eggs, pancakes, and hash browns, griddles are undoubtedly the heroes of the breakfast table. Unfortunately, many of the foods you would usually cook on the griddle are also traditionally full of milk and other animal products. If you’re a vegan with a hankering for breakfast classics, there’s no need to despair. Here are 3 vegan breakfast recipes that you can make on your griddle.
Non-vegan pancakes get their richness and creaminess from whole milk or buttermilk, both of which are dairy products. Many vegan pancake recipes make up for this with complicated ingredients that you may not automatically have on hand, but this recipe from Nora Cooks is an exception. Simply combine 1 1/2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 2 tablespoons of sugar. Then add the wet ingredients: 1 cup of non-dairy milk (I prefer to use oat milk), 1/2 cup water, and 2 tablespoons of canola oil. This simple version of vegan pancakes is just as fluffy and rich as the non-vegan equivalent.
Vegan Breakfast Recipes: Tofu Scramble
Eggs can be one of the most difficult things to give up when you decide to go vegan. Fortunately, tofu scramble is a simple solution to any egg cravings. Simply cut up a block of firm tofu and crumble in a bowl with a fork. You can then add any veggies or spices you would to scrambled eggs. Some of my personal favorites are turmeric, cayenne pepper, and fresh dill or basil.
Vegan French Toast
French toast is one of those things that you may think couldn’t possibly be made vegan, but this recipe from Minimalist Baker works a treat. For the French toast batter, combine 1 tablespoon of ground chia seeds, 1/2 tablespoon of agave nectar or maple syrup, 1 cup unsweetened non-dairy milk, and half a teaspoon each of cinnamon and vanilla extract. Cover the bowl and put it in the refrigerator for 10–15 minutes to activate the chia seeds, which will thicken the mixture. From there, simply griddle the dipped bread as you would any French toast.
