You love making a hearty, quick and easy breakfast for your family before you all go off on daily adventures. But sometimes your family likes to kick things up a notch during their camping trips. So why not extend that to your breakfast with this fun Tex-Mex haystack dish?
Tex-Mex Haystack Ingredients:
- ⅔ c. of sour cream
- 2 tbsp. of sun-dried, oil-packed tomatoes, chopped
- 2½ tsp. of Tex-Mex seasoning, separated
- ½ c. of panko bread crumbs
- ¼ tsp. of salt
- 6 eggs, large
- 4 bacon strips, cooked and roughly chopped
- 3 green onions, sliced thin
- 2 tbsp. of fresh cilantro, minced
- 3½ c. of shredded refrigerated hash browns
- ⅓ c. of Mexican cheese blend, shredded
- 5 tbsp. of canola oil, separated
- ½ c. of salsa
- Green onions, chopped fine (optional)
Tex-Mex Haystack Instructions:
In a medium bowl mix the sour cream, tomatoes, ½ tsp. of Tex-Mex seasoning, sliced green onions, and cilantro; then put the bowl aside.
Lay the hash browns on a paper towel in a single layer. Press down with another paper towel to remove as much liquid from the potatoes as possible.
In a big bowl blend the hash browns, cheese, other 2 tsp. Tex-Mex seasoning, bread crumbs, and salt.
Heat 3 tbsp. of oil on your Steam Shell Griddle set to medium-high heat. Pour ⅔ c. of the hash brown mixture in the heated oil; make sure you leave a good space between each pouring. Using a spatula, flatten each a little making 6 patties.
Cook for 5-7 minutes or until patties are golden brown and crispy (you may need to add extra oil during cook time). Move each patty to paper towels to drain; then keep them warm.
Heat the rest of the oil on medium heat. One by one, break the eggs onto your griddle; decrease the heat and cook until the yolks begin to thicken and the whites are firm. Turn over each egg if you’d like and cook to preferred doneness.
Assembling: Place each potato patty on a plate and top with one egg then some bacon, salsa, and sour cream. If you wish, some chopped green onions can be sprinkled on top. Enjoy!
