You’re always looking for new potato side dishes to serve to your family and friends. These two dishes will pair well with any meat, poultry or fish you can cook on your Steam Shell Griddle.
Garlic Parmesan Potatoes (Serves 6 in 25 min.)
- 8 skins-on red potatoes, washed and cubed
- 1½ tbsp. of paprika
- ¼ c. of parmesan cheese, grated
- 3 tbsp. of olive oil (extra needed for cooking too)
- ¾ tbsp. of garlic powder
- ¼ tbsp. each of salt and black pepper
Warm your Steam Shell Griddle to high heat; evenly coat the griddle’s surface with olive oil.
Mix together in a big bowl the cubed potatoes, paprika, olive oil, salt and pepper, and garlic powder until potatoes are evenly coated.
Pour the potatoes on the heated griddle and cook for roughly 10 minutes on high, stirring periodically.
Sprinkle the parmesan cheese evenly over the potatoes and, stirring occasionally, cook until they reach your desired crispness, about 5 minutes.
Twice Cooked Griddle Baked Potatoes (Serves 6 in 35 min.)
- 6 Russet potatoes, sliced ½-inch thick
- 2 tsp. of black pepper
- 2 tsp. of rosemary, dried
- 2 tbsp. of olive oil
- 2½ tsp. of garlic powder
- Salt to season
On your griddle, boil the sliced potatoes in a big pot for approximately 10 minutes or until they can be pierced with a fork easily.
Move the cooked potatoes into a large mixing bowl; add in pepper, rosemary, garlic powder and salt. Mix until the potatoes are coated evenly.
Heat your Steam Shell Griddle to high heat; spread a thin layer of butter (or olive oil) over the surface.
Place the potato slices on your griddle; cook until their outsides are light brown and crispy—around 5-6 minutes on each side. Serve with your favorite meat.
