You’re in the mood for a grilled cheese sandwich, yet you’d like to change it up a bit. These two fantastic recipes are just what you’re looking for. You can even prepare them on a Steam Shell Griddle! The griddle will cook everything evenly, quickly and the result will be a flavorful lunch (or dinner) you’ll want to cook again and again.

Griddle Ham, Pesto and Cheeses (4 servings)


  • 8 slices of your favorite bread
  • ½ c. of basil leaves packed loosely
  • 1 thinly cut plum tomato
  • 8 oz. of deli ham (any flavor), sliced thin
  • 4 chopped sweet, pickled cherry peppers
  • ¾ c. of provolone cheese, shredded
  • 4 tsp. of prepared pesto
  • 2 tbsp. of mayonnaise
  • 2 tbsp. of softened butter


Preheat your Steam Shell Griddle to medium heat.

Stir pesto and mayonnaise together in a small bowl and spread on 4 slices of bread.

Add to the 4 bread slices basil leaves, couple slices of ham, some provolone, peppers, and a slice of tomato. Place the other 4 bread slices on top to make 4 sandwiches; spread the butter on the outer sandwich sides.

Place each sandwich on your heated griddle and toast on each side for 2-3 minutes or until the cheese is melted and the bread is light brown.


Griddle Cheese and Pepperoni (4 servings)


8 slices of sourdough bread (or your favorite bread)

  • 6 tbsp. of softened butter, divided
  • 4 oz. of sliced Brie cheese, remove rind
  • ½ c. of Monterey Jack cheese, shredded
  • ½ c. of white, sharp cheddar cheese, shredded
  • ½ c. of Gruyere cheese, shredded
  • 3 tbsp. of mayonnaise
  • ⅛ tsp. of onion powder
  • 3 tbsp. of Parmesan or Manchego cheese, grated finely
  • 24 slices of pepperoni


Preheat your griddle to medium-low heat.

On one side of each sourdough slice, smear half of the softened butter. Put the slices on your heated griddle, butter side facing down. Toast for 2-3 minutes or until they’re golden; then move to a big plate.

Blend mayonnaise, onion powder, Parmesan (or Manchego) cheese, and the other 3 tbsp. of butter in a small bowl. In a second bowl, mix Gruyere, Monterey Jack, and white cheddar cheeses together.

To make the sandwiches: Put 3 slices of pepperoni on the toasted side of 4 slices of sourdough; top those with a Brie slice then 3 more slices of pepperoni; next, evenly add the cheese mixture on top of the pepperoni. With the toasted side facing the cheese, place the other 4 sourdough slices on top creating 4 sandwiches. Coat each outer sandwich side with the mayonnaise mixture then place on the griddle. Cook for 5 minutes on each side or until the cheeses are melted and the bread is golden brown.
