Salmon with Red Pepper Salsa (Serves 4)


Ingredients for salmon:

  • 1 tsp. of cumin, ground
  • ½ tsp. of coriander, ground
  • 2 tsp. of chili powder
  • ½ tsp. of salt
  • ¼ tsp. of chipotle chili powder, ground
  • 4 6 oz. salmon fillets, skinless


  • ¼ c. of tomato, chopped
  • 1 tbsp. of fresh cilantro, chopped
  • ⅛ of salt
  • 1 c. of red bell pepper, chopped
  • 2 tbsp. of red onion, chopped
  • 1½ tsp. of lime juice, fresh squeezed



Heat your griddle to medium-high heat.

Blend the spices for the salmon in a small bowl then coat each fillet evenly.

Spread a bit of extra virgin olive oil on your griddle and place each spiced fillet on it. Cook the salmon for 4 minutes on both sides, flipping once.

As the salmon cooks, blend all the salsa ingredients in a medium-sized bowl; serve the salsa with the cooked salmon fillets.

Classic Crab Cakes



  • ¼ c. of bread crumbs
  • ¼ c. of mayonnaise
  • Butter, generous amount
  • ¼ c. of saltines, crushed (approximately 10 crackers)
  • 1 beaten egg
  • 1 lb. of blue crab meat, fresh
  • ¼ tsp. of 1 or 2 optional additions: cayenne pepper, Worcestershire sauce, Old Bay seasoning or Dijon mustard


Blend mayonnaise, optional seasonings, saltines, and egg in a medium-sized bowl. Next, mix in the drained crab meat; but be careful not to break the meat pieces. Let the mixture firm up in your refrigerator for one-half hour.

Spread the bread crumbs on parchment paper.

Make 8-10 1-inch thick patties out of the crab mixture and coat each patty evenly with the breading. As each one is made, put it on a plate.

Heat your griddle to medium heat and spread an ample amount of butter over the cooking area. Put the patties on the griddle when the butter is bubbling but hasn’t started to turn brown yet. Cook the cakes for roughly 4 minutes on each side or until each cake is lightly browned on both sides.
