2 cups zucchini shredded
1 large sweet onion shredded
2 cloves garlic
1/3 cup avocado or olive oil
2 cups pancake mix
Salt and Pepper to taste
2 cups apple sauce
1-pint sour cream
In a large bowl using a paper towel or cheesecloth pat dry the shredded zucchini. Then combine the onion, garlic, egg, oil and pancake mix. With a wooden spoon stir mixture until thick. If needed add more pancake mix to thicken the pancakes. Heat your Steam Shell Griddle to the appropriate temperature. With a large spoon or ladle pour out the mix to 3-inch pancake size. Flip pancake when the bottom starts to turn golden brown. Cook until both sides are golden brown and the pancake is cooked thoroughly.
Serve warm with applesauce and/or sour cream
Two great alternatives that can be used are:
A gluten-free option is to use rehydrated Quinoa. It would be the same ratio 2 cups pancake mix to 2 cups Quinoa, but you will have to hand form your pancakes as they will fall apart if they are ladled on the griddle. Also be gentle flipping them.
During the Passover, substitute the pancake mix with Matzo meal using the same ratio.
