Your griddle is a great tool for preparing meals without heating up the whole kitchen during hot summer months or just creating great dishes all year long. Get that griddle ready and dazzle your friends, families, and customers with these recipes.
Breakfast Quesadillas
Start the day right with quesadillas stuffed with fillings you cook on the griddle.
Ingredients:
- 3 eggs
- 1 c diced potatoes
- 1/2 lb. thick-sliced bacon
- 3 c grated Mexican-blend cheese
- 1 1/2 t garlic, minced
- 1/4 c red onion, chopped
- 4 10-inch flour tortillas
- 1/4 to 1/2 c salsa or salsa verde
- salt, pepper, cilantro to taste
Directions:
Begin by cooking the bacon on the griddle until it is just crisp. Remove it from the griddle and wrap it in foil to keep it warm.
Next, cook the onion and garlic in the bacon grease. When they are transparent, add the potatoes. Push them to one end of the griddle and cook them until they are golden brown.
In the meantime, whisk the eggs and pour them onto the other end of the griddle. Use a spatula to break them into scrambled curds. When the eggs are set, remove them from the griddle.
Now, dice the bacon and mix it with the eggs and potato mixture.
Place two tortillas on the griddle and top each with 1/2 cup cheese, then half of the egg mixture, about 1 to 1 1/2 tablespoons salsa or salsa verde, another 1/2 cup cheese and the remaining tortillas. Cook them until the first side is golden brown, and then flip the quesadillas to brown the other side.
Pita/Flat Bread
Add some yum to your lunchtime salad with fresh, hot flatbread.
Ingredients:
- 2 t instant yeast
- 1 t sugar
- 1 t salt
- 1/2 c warm milk
- 1/2 c water
- 1 T olive oil
- 2 1/2 c bread flour
Directions:
Dissolve the yeast and sugar in the warm milk. Add the remaining ingredients, except for the oil, and mix until a dough ball forms. Knead the dough for 4 to 5 minutes. Cover it and let it rest in a warm spot for 40 minutes.
Divide the dough into eight balls and drizzle them with the olive oil before covering and allowing them to rest for 10 minutes. Flatten them to 6 to 8 inches in diameter, and cook them on your oiled griddle until they are browned.
Tabasco-Honey Chicken
Finish the day with another meal that’s sure to please.
Ingredients:
- 1 T Tabasco chili sauce
- 1 t honey
- 1 t olive oil
- pinch each salt and pepper
- 1 chicken breast, cut into 6 tenders
Directions:
Mix the first five ingredients together. Add the chicken and marinate for 30 minutes or longer. Cook the chicken for 4 to 6 minutes.
NOTE: Do NOT reuse the marinade as a table sauce. If you want to offer sauce for dipping, mix a fresh batch.
