Chicken fajitas are a Tex-Mex inspired dish full of healthy and filling ingredients. A griddle will make short work of cooking the peppers and onions to perfection and yielding tender, juicy chicken. Serve with corn or flour tortillas and an assortment of toppings and this dish is sure to please even the pickiest of the bunch.
- 4 boneless skinless chicken breasts
- 2 tsp garlic salt
- 2 tsp black pepper
- 1 tsp chili powder
- ½ tsp cayenne pepper
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow onion
- Olive oil
- 15-20 corn or flour tortillas
- Topping suggestions:
- Sour cream
- Avocado slices
- Lime wedges
- Pepper Jack cheese
- Shredded lettuce
-Slice the chicken breasts into thin strips. Slice bell peppers into strips, discarding the core and seeds. Slice onion into strips that are similar in size to the slices of bell peppers.
-Mix garlic salt, black pepper, chili powder, and cayenne pepper in a small bowl. Use this mixture to season the strips of chicken.
-Turn the griddle to high and drizzle with olive oil. Place chicken to one side and peppers and onions on the other.
-Allow the chicken to sear on each side, about 2 minutes, before turning the griddle down to medium-high heat. Cook the chicken for an additional 5 minutes or until the meat is white all the way through. Stir the peppers and onions frequently. They are done when the onions are translucent and the peppers have softened.
-Warm the tortillas by placing them on the griddle for a few seconds on each side.
-Serve with an assortment of your chosen toppings and enjoy!
