These burritos are easy to make and great for using up some leftovers in a new and exciting way. They are also adjustable to whatever leftovers you have on hand or to your taste preferences. This recipe also works with lentils or beef instead of chicken. These grilled burritos are crispy on the outside and warm and gooey on the inside, a perfectly satisfying dinner or lunch for all times during the year.
Prep/Cook Time: 30 mins
Makes 4 servings
What you need:
- 4 large tortillas
- 2 cups cooked rice
- 2 cups chicken
- 2 cups Monterey jack shredded cheese
- Hot sauce
- Olive Oil
What to do:
Preheat the griddle on medium-high heat. While griddle is heating up, place tortillas side by side on a flat surface.
On each tortilla, place 1/2 cup of Monterey jack shredded cheese, 1/2 cup of rice, and 1/2 cup of chicken in the middle. Put on hot sauce to taste.
Fold in the ends and roll up the burritos before placing them on the griddle. Make sure the side with the outside end of the burrito is face-down.
Grill each side of each burrito for five and a half minutes, or until crispy and golden brown. Then serve hot with toppings of your choice. These burritos are good with salsa, sour cream, guacamole, or even more hot sauce. Enjoy!
