Grilled Pork Kabobs

With your grill, you can have a luau right in your own backyard! This recipe is low in sodium and carbs, but delicious anyway!

  • 1 1/2 pound lean boneless pork cubes (roughly 1 inch)
  • 1/2 cup reduced-calorie Italian dressing
  • 1/4 cup Chardonnay or other white wine
  • 1/4 teaspoon ginger
  • 12 large mushrooms
  • 12 1 inch chunks pineapple
  • 1 large mango, peeled and cut into 1 1/2 inch pieces
  • 2 medium zucchini, cut into 1-inch pieces

Pork Kabobs

Place pork cubes in a zip-top heavy-duty plastic bag. Combine the Italian dressing, ginger, and wine and pour over pork cubes. Seal the bag and marinate it in the refrigerator for 8 hours, turning the bag occasionally.

Remove pork from marinade. Pour marinade into a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Set aside.

Thread pork, pineapple, mushrooms, mango, and zucchini alternately on 12 foot-long skewers. Heat your Steam Shell Griddle to medium heat and grill for 12 minutes until juice runs clear. Turn and baste frequently with the marinade. Finished meat should be firm yet springy with an internal temperature no lower than 145F.

Pork Kabobs: Suggestions and Variations: Can be served over a bed of white rice for a bit of Asian fusion. (Not recommended for people watching their carb intake.) Heat should cook out alcohol, but if you still dislike cooking with wine, white vinegar can be substituted. Pork can be substituted with fish, shrimp or chicken. If beef is used, Chardonnay must be replaced with Burgundy or other dry red wine. Fresh pineapple and mango works best. Zucchini can be replaced with baby carrots or summer squash.
